Cupcakes that Rule

Cupcakes that Rule
by Laura Beaulne-Stuebing, January 3, 2008

I’ve been talking about it, sitting with the idea, and mulling it over. Finally, after much perseverating, I gave in. I decided to treat myself – as a little personal Christmas gift.

I am now the proud owner of a copy of Vegan Cupcakes Take Over the World: 75 Dairy-Free Recipes for Cupcakes that Rule.

Isa Chandra Moscowitz is my vegan hero. I’ll just state that right out, unashamedly. I can’t, and won’t, forget the other author of VCTOTW, Terry Romero – a sexy lady, indeed – but I don’t idolize her as I do Isa. Maybe because she’s just too sexy for me – I can’t connect with that image; but Isa’s style, skills, and attitude are accessible to me. She’s anti-establishment, anti-corporate, and anti-meat. She’s a mature punk, a vegan, a feminist, and a super cook and baker.

I’ve had good experiences with Isa’s Vegan with a Vengeance : Over 150 Delicious, Cheap, Animal-Free Recipes That Rock – so how could I not pick up a copy of VCTOTW? It was about time, too.

And – this is pretty important to me – Isa’s a real woman. She has curves and is proud of it. I’ve struggled, and still do, with my own body issues and Isa is a darn good role model – I want to be proud of my own curves and cravings and femaleness.

But enough fawning over Vegan Queen Isa. It’s time to talk cupcakes!

Who could imagine vegan could be so decadent? Mucho Margarita, Cashew Butter Cardamom, Tiramisu, and Banana Split cupcakes? How did Isa and Terry come up with these recipes – they look fantastic! I’m craving sugar and sweetness just thinking about them…

The fancy ones I’ve listed above are a little over my head, at this point. I’m still a novice baker. I’m still learning. So, the classic cupcakes – like vanilla, chocolate, etc. – will be my starting point. I’ll master these tasty treats then move on to more difficult, more impressive, varieties of cupcakes.

And I will impress. My omni friends and family won’t believe it. I’ll take over the world with vegan cupcakes, one dessert at a time.
