Here’s how (and why!) I do big salads

November 4, 2010

From the comments in yesterday’s post about giving salad another chance, it looks like not everyone in the vegan community is anti-salad, which is cool, and for the rest of you, what are you waiting for? An idea?  OK, here’s one: here’s why I started eating salad again.  By the quart:

Pro tip: sometimes I’ll throw some cooked food in the salad, like beans or roasted red peppers or grilled eggplant. In my mind, it still counts as salad, but when I pour chilli on top I figure that’s different (but what a hearty dressing!)

This is also another reason I’m a big fan of the whole pre-washing vegetables idea – these things can take a whole head of lettuce, so I’ll prep 2 or 3 at a time and keep the rest in bins so I can spend my time eating the salad instead of making it – like I said, it takes a while to put one of these away!

Oh, Jason, I’ve got you beat! My big salads are… dunno… must be 10-12 cups! Ridiculous, I think. But I love them. 🙂 Those who dislike salad are depriving themselves of one of the great joys in life! (Though I agree that some pathetic iceberg lettuce and shredded carrots do NOT a salad make!)

I wholeheartedly agree on all points you mentioned. And hey, mentioning big salads got me to actually watch the whole video, so kudos to you! 😉

Well, now Angela’s mom knows what to get me for Christmas – a bigger bowl!

Wow! That’s a big salad! You’ve inspired me and I plan to have a not-quite-as-big-as-yours salad with my supper of beans and rice.

TC, one way to sneak the salad in is to serve it on the bottom of the plate and pile the entree on top. Chilli works great for this!

Great idea! I really like warm foods on my salads.

TC, this will blow your mind: salad on the bottom, topped with chilli, topped with avocado. Cold-hot-cold! Plus you can go extra spicy if you like the heat, and let the avocado cool it down.
